Ember & Slate was born from a simple conviction: that cooking over live fire — real wood, real smoke, real flame — elevates every ingredient it touches. Not as a gimmick, but as a philosophy.
Chef Marco Valerio spent years studying fire-cooking traditions across the Americas and Europe before bringing that mastery to South Congress Avenue. Every dish at Ember & Slate is shaped by that journey — contemporary in presentation, primal in soul.
We source from local Texas farms, coastal fisheries, and heritage ranchers who share our obsession with quality. When the ingredient is this good, fire does the rest.
